Meatless Monday and Moonlight

Hello everyone! What's happening outside your window?

I'm not very fond of days when all I feel like I am doing is trying to keep up and this was that kinda day. A quick, simple meal was necessary this evening and since I had a squash that needed to be cooked, curried butternut squash soup was on the menu.

Drizzle olive oil in a pot and saute 2 chopped onions and 4 cloves of minced garlic til softened; add 1 TBS of curry powder and stir until fragrant; add 3-1/2 cups of water and your favorite vege extract powder (or 2 cans of chicken broth and 2-1/4 cups of water), along with a chopped 3-1/2 lb butternut squash. Boil and then simmer for about 20 minutes. Blend in batches and return to pot to heat through and enjoy!

I can't believe how this day has just flown by. It is already bedtime on my side of the world.

My window is at work and today is a bit gloomy..it's in the middle of a cold front so spring has been postponed for another week at least. But, I have faith that it WILL come :-)

Ooh we had homemade soup this evening, we had sweet potato and carrot, with crusty bread. Thanks for the recipe, will give this a go, soup is one of the few things I can manage to make. xx

Soup would be great here....it's turned cool, requiring a bit of heat in the morning. Arkansas weather....you gotta love it! ha

I know exactly what you mean!, and was precisely what I was telling my friend I've been feeling like since pretty much the beginning of the year! I seem to be busy ALL the time, yet never manage to finish anything, do you know what I mean? Sometimes I feel like I'm having more than I can really handle. Oh well... still an entire afternoon to go around here. Hang in there!!

Well, I guess I'm not having a meatless Monday. We're having a ham and asparagus casserole. I hope you still love me!!!

Jingles...looking longingly outside. In his mind he is roaming around visitng his peeps...and that doesn't mean birds! lol

Don't you wonder what we would do without homemade soup, This soup sounds delicious, but then again it has one of my favorite vegetable butternut squash.

A clear cold night here outside our window... even a chance for patchy frost and it's mid-May. This is not normal for here. I did end up covering my vegetables in the garden, but the remainder of the plants and the perennials of course are on their own. It's slowly warming up this week and looks like this will be our last freakishly-cold night - hopefully for this spring.

Beautiful moon out tonight - it's a "Flower Moon" this month.

Hope you have a wonderful week. My hubby fixed spaghetti for dinner. It was delicious. I made a tomato and cucumber salad. My daughter-in-law picked up the veggies at a farmer's market this weekend. Salad was fresh and tasty.
