Simple Soup and Scarf

The past several days have been dusty, dreary, blustery and thundery. Not much rain; lots of dust. We haven't seen much of the sun since Saturday.

Jingles thought she wanted to go on the balcony to check things out. She sniffed around a bit ...

... but then decided she wanted right back in. You can't really see the dust but it is there. So much for all the cleaning I did after the monster storm nearly two weeks ago.

I made another simple, delicious and healthy soup.

SPICED LENTIL SOUP: Saute 1/2 cup of diced onion; 4 cloves of minced garlic and 1/3 cup barley in 1 TBS of olive oil. Add 3 qts of vege stock and 1 cup of brown lentils, bring to a boil and then simmer until lentils are tender. Stir in 1 can of chickpeas, 1/2-1 lb of spinach (I use frozen) and 18 oz of salsa. Heat through and serve.


I love to cook but during regular school days, it can be such a chore in the rush of getting everything else done. Now with time on my hands, cooking and baking is pleasurable. My pajama wearing days have allowed me to get many projects done. This scarf was a UFO that is now complete.

Wow. I don't know how you can live with all of that dust! Hope things clear up for you soon. The scarf and Jingle are lovely. ;)

Things are slowly improving here - at least the sun was out yesterday. Temps are moving up to more normal.

Yummy soup! I love lentils, and my mother makes them for me regularly. I was once heard they were what people ate regularly in Jesus' times. Could it be? Now every time I ate them, I think of Him; more that is.
It rained last night! Odd in summer days here in Guatemala, but I'm thinking it had to do with the extremely high local temperatures, and the tail of a cold front from the north. The mix ought to result in rain. It felt nice, though!, and the flowers and plants surely appreciated it.

I love lentil soup too, but I don't like dust....even the little bit we get when it's dry...poor Jingles...but she has you home to keep her company and it sounds good to hear you're getting a few things finished. We had part of the storm, but it had worn itself out quite a bit by the time it reached us...today, cold wind but lots of sunshine and blue skies...if I could I'd send it your way....

Even if I had all the time in the world, I don't know that I would ever love cooking and baking, but I think I might just convince my husband to make that soup!

Your skies do not look pretty at all. What is with all the dust lately. We have had a lot here too. I am laughing to know that Jingles was not impressed with a dusty day outside. He, he!
