Applesauce Muffins

Egg producers in Kuwait recently tried to hike the cost of eggs which caused quite a stir amongst the Cooperative Socieities.  As a result, it's been difficult to find eggs in the market.
Since I like to bake, I decided to look for eggless recipes.
These vegan applesauce muffins certainly fit the bill and I will definitely be making them again (next time with raisins).

2 cups wheat flour; 1/2 cup brown sugar; 1 cup applesauce; 1-1/2 tsps baking powder; 1/2 tsp baking soda; 1 tsp cinnamon; 1/2 tsp cloves; 1/2 tsp nutmeg; 1/4 cup oil; 1/4 cup soymilk (or regular milk); 1 tsp vanilla.  (I also threw in a handful of oatmeal for good measure.)  Mix and spoon into greased muffin tins.  Bake at 350 until done.

I often times don't add eggs when called for...lol.... Have you ever made a cake mix with a can of soda? One box of cake mix, one can of any soda. Bake normally. Its fabulous :-)

Delicious looking muffins! When I was fully vegan, there was a powdered mix egg-replacer that I used and it acted the same way as eggs for baking. I can't remember the name of it but it worked great! I'll let you know if I remember the name as it may be available in the supermarkets there.
