Tea Time

Once again I am joining Kimmie at Art in Red Wagons for Tuesday tea.  And once again I've made banana and coconut bread.  I previously posted a link to the recipe, but have written it out below the way I make it (I cut back on the butter and sugar).
Banana coconut bread:  2 mashed ripe bananas; 1/2 cup skim milk; 2 eggs; 1/2 a stick of butter; 1-1/4 cups wheat flour; 1 tsp baking powder; 1/2 tsp cinnamon, 1 cup coconut; 1/2 cup brown sugar.  Spray one big bread tin or several mini ones and bake at 350 til done.  

Along with the banana coconut bread, I'm having Zhena's Gypsy Organic Coconut Chai with almond milk and a little bit of brown sugar.

These last few days of school have been crazy busy!  I'm looking forward to Thursday when my summer holiday will finally begin.

This looks delicious! I have an old recipe for Hawaiian bread that also uses crushed pineapple...I might have to dig that out!

You always serve the healthiest food with your tea. Totally wonderful banana bread. I may have to try that once the weather cools a bit.

You mentioned your hot weather on my blog. Ours is super hot for this time of year, too. Highs in the 90s, where the average is usually low to mid 80s. That's why I work early, early in the morning. After that, it's way too hot.

I always cut back on the sugar too. It's amazing how much some of the recipes call for.

Keep cool! Your temperature chart is quite amazing. How do you stand it? :)

Your loaf sounds yummy and the tea too, love the use of almond milk. I recently bought some coconut milk, but prefer the almond :)
Your food photos in the last few posts look so awesome--especially the mango salsa! I'm going to try one of those little crochet bags too :)

Yum! I love coconut - I've never put it in banana bread though - what a great idea! And it sounds so good with your coconut chai tea ... I'm reading this at night and it would make a great bedtime snack :)
