Special Delivery

Today is the first day of Muharram.
The Islamic New Year.
And we are yet again enjoying another 3-day weekend.
This morning we received a special delivery from our  friends in Sri Lanka.
Boxes filled to the brim with mango, coconut and pineapple.
So I set to chopping.  Delicious fresh pineapple.
And baking.
Pineapple upside cake.

I topped it with a little Greek yogurt combined with powdered sugar, chopped pecans, ground ginger and cinnamon, and had a cup of honey, lemon & ginseng tea.
My throat is a little scratchy at the moment.
 Enjoying a quiet day at home.
 Crocheting simple things.
 Hope your day is a good one.

So glad to have stopped by and got caught up over here. As always you wonderful life amazes me. Thanks for your words of wisdom this morning. Believe me when I say I'm taking it pretty slow and do have my cheats on some things every now and then. I didn't grow up on a lot of pasta, breads, potatoes and sugar, so it hasn't really been that bad. In fact I had a few cups of Skinny PopCorn last night. But then I knew we were planning a good ride today. Oh, and yes, snowshoeing has been discussed. Robin, is my personal trainer, gardener buddy..she will keep me moving one way or another. Jazzercise is her baby, let's see if I can dance....this should be fun...not...

Wow! Mangoes! I have never baked a pineapple cake. I have never even tasted one. Looks so yummy.

What a wonderful gift from your friends--so thoughtful & DELICIOUS! I haven't had a pineapple upside down cake for ages--will have to try your recipe.

This is such a great gift! I remember, one of my colleagues at work brought us some mangos from Pakistan, I loved them a lot. Thanks for the recipe, I have to try this cake, my husband loves pineapples.

Hi Tammy, You sure have some nice friends. I have never tried a pineapple upside down cake, I'm sure it must taste yummy. Loved your crochet rocks. You always seem to make time for crochet, that is so nice. I seem to have lost my crochet mojo, temporarily of course! :)

Hi Tammy. Love fresh pineapple, and haven't made a pineapple upside down cake in years. It was my mom's favorite.

In fact, last week I just taught one of my granddaughters, (16) how to cut and serve a pineapple.

All that fruit looks delicious, fortunately coming into summer here so those fruits are in the supermarket now.

Your life and living in Kuwait is so interesting and I am thankful you share so much. Your friends are very kind. Delicious pineapple upside down cake and tea. My mother used to make the most delicious pineapple upside down cake and I miss her making it for me. Blessings dear...

Last night I was in a chat with a friend from Indonesia whose Mother is a Muslim and I learned about the Islamic New Year. You are getting spoiled with long weekends but enjoy them. Wow, you were lucky for receiving this parcel JIT = Just In Time before the 3 days off. Otherwise the mangoes would have seen their best days I guess. Still amazing that they made it from Sri Lanka, considering how long the post takes in your country. Your upside down pineapple cake looks yummy and so does the Greek yogurt with ginger and cinnamon; great idea!

Oh my gosh! What lovely friends. What I wouldn't give for a fresh mango that actually tasted like a mango right now. We're in winter fruit now - just apples, oranges & pears basically.
