Silver Sunday and Soup Therapy

The pieces below remind me of the trip my husband and I took to Thailand about 5 years ago. It was our first trip without the kids.


Sadly, I have few photos to remind me of our time there. We visited so many temples, watched elephants parade and play soccer, saw a snake show (and Sam actually held the snake), took a ride in a tuk-tuk. But, one summer while the kids and I were away, DH decided to reformat the computer. He didn't think to back anything up. All our pictures from Thailand were on there and that was that. Only the memories remain. My bedroom now has lots of little elephants hanging about.

Anywhoo ... today on Yahoo I read an interesting article about soup. The opening paragraph reads: The healing power of soup: something that both scientists and grandmothers can agree on. From helping you lose weight to warming you up from the inside out to boosting your immunity, soup is a winter staple that you shouldn’t be without. I love soup and make it all year round. Last week I found a slow cooker recipe, but since I like fast and easy, I decided to make it my own.

Savory Bean Spinach Soup
3-14 oz cans vege broth
1 15-oz can tomato puree (I used diced canned tomatoes and a bit of tomato paste)
1 15-oz can white beans
1/2 cup brown rice (I used instant)
1/2 cup chopped onion (saute in a bit of olive oil)
2 cloves garlic minced (I used garlic powder)
1 tsp dried basil, crushed (I also sprinkled in some Italian seasoning)
1/4 tsp salt
1/4 tsp black pepper
1 bag frozen spinach
shredded or powdered parmesan cheese to serve

Saute the onions and garlic in olive oil then just add everything together and let it cook for about 20 minutes. I added a pinch of red pepper flakes to give it extra spice.

This is a nice, thick yummy soup! Had it with some wasa toast and smoked provolone cheese. Delicious!

Today I had leftover soup for lunch and wasa topped with avocado (mashed with salt, cumin, lemon juice).

Yesterday was bright and sunny, but during the nite we had a little rain pour that lasted all of about 30 seconds. Today was a bit cloudy. I saw the skyline this afternoon and thought it looked rather silvery gray.

These pictures were literally snapped just seconds apart. I could see the sun as it was dropping behind the clouds. Amazing

I want to thank you for all of your kind and thoughtful posts on my blog. I really just blog to get my thoughts down and to help cope with the grief of my son, Caleb. I started scrapbooking to document his short but important life and it has snowballed into a hobby that keeps my hands active and my mind from wandering to dark places. Blogging helps me to visually document my scrapbooking efforts and to hopefully help someone else who has had to endure the kind of pain my husband and I have with the loss of our beautiful little boy.

Silver Sunday, what a nice idea! I would fit in better with that since I have silver things in my home, but can't do well with White Wednesdays since there is barely any white in my home. Happy Sunday! The sun is shining here for the first time in days!! It's amazing how much more energy I feel like I have with the sun out.
Loved your silver pieces from Thailand. Sorry about losing all the pictures but I know you have great memories. My husband has been to Thailand on business and he often comments on what a beautiful country it is.

We just love soup. I do it in the crock-pot & it cooks for hours & makes the house smell so-o-o good on a cold winter day!! Now to make the biscuits to go with it!!

I love soup too, and I am getting to the point that I don't even like canned soup anymore. I want homemade! So thanks for the recipe. I also LOVE avacodos!!! Wish I had lunch with you, the soup and crackers with avacodo looks dee-lish!!!!

I had a good weekend up north. Ernie went snowmobiling without me. :) he had a good time anyway.. and I enjoyed the peace and quiet and did some painting... small projects. your sunset is gorgeous... we can find God's beauty anywhere if we open our eyes to it. sounds like one of your quotes:)!

Hi Tammy, I agree with you about the soups. I made a big pot of vegetable soup that last few weeks which we enjoyed. Although one day I ate too much sourdough bread with it that I could barely eat my soup! My soup this week is potato leek. Your recipe sounds delicious too!

I remember your pictures from Thailand. In fact, I remember talking to you in the car on your way to the airport. I think the emails with the pictures were one of the first emails we ever exchanged. Didn't you sing karyoke on that trip?? HA! Sorry you lost your pictures.
Your soup looks fabulous. I will be copying that and trying it for sure. I had avocados in my salad today at lunch. I will always credit you for turning me onto avocados, as I hated them before that summer in Honeoye. Don't know what changed, but I can't get enough of them now.
Love the sunset. I won't be seeing the sun for a few days, as we have a few days of rain coming. BOO!!
