Monday Blues and Muffins

Happy Monday to everyone. It's our second day back to school while most of you are just starting your week.

Today started out with clouds. Cleared up mid-day. And now it is very windy out there ... and unfortunately, dusty. This wallhanging is on my kitchen door. Bought it during a layover in Amsterdam.

A collector's plate hangs in the hallway. We have a friend who lives in Amsterdam and during a 9-hour layover coming back from the States one summer, he met me and the kids and took us for a boat ride along the canal.

Amsterdam is often cold and drizzly and it certainly was this day. These are all sites we saw during the boat ride.






Unfortunately, this is what Zack did the whole time!


No matter where we went -- in the car, on the boat, to a restaurant to eat -- he would wake up only long enough to get to the next place and then he would promptly fall asleep again. Poor guy! I think he was about 5 at the time. Jet lag really does a number on us when we come back this way.

I often make Banana Muffins as we eat a lot of bananas around here and some always get a little ripe before we can get to them. I use the same honey wheat muffin recipe I posted about before and add bananas and some extras to make them moist and delicious.

Mash 1-1/2 ripe bananas
Stir in 1 egg, 1/4 cup canola oil, 1/2 honey and 1/2 cup of milk; mix together.
Add 1-1/2 cups of wheat flour; 2 tsps baking powder; 1/4 tsp salt; a pinch of cinnamon; TBS of oatmeal and chopped pecans or walnuts. Blend

Grease your muffin tins, fill and bake in a preheated 350 degree oven until done.


Great for breakfast or a snack!

The wind is really whipping up out there now, carrying dusty with it. Yuck! Weather folks say that the next few days will be cold. Hope you have a fantastic evening and a terrific Tuesday. Peace & blessings, Tammy

Perfect. I have some bananas that are just right for this recipe.

That does it Amsterdam has now moved up on our list. We were just discussing that we want to go on a TULIP cruise in 2011 for our 25th.

Thanks for you wonderful comment. Those muffins look delicious. Here in Iowa we are experiencing a blizzard. 7Th snow day of the school year and winter is not even 1/2 over. Monday started off great until the evening. All that wind kicked up the dust and we were promptly eating it for breakfast this morning. Wish I could of had your yummy banana muffins instead.
Now those pictures of Amsterdam I havent seen yet. You just have friends all over the place don't you? At least you spent your time wisely while you were there. I really don't think Zack cared whether he missed any of the sight seeing or not, the poor guy.

Does your work/school week actually begin on Sunday? I've never heard of that - interesting!

We saw the sunshine today for about 10 minutes at lunch time and that was its first appearance in over 2 weeks. Now, it's back to clouds, more flurries and very cold weather coming in again for the end of the week/weekend.

I have heard a lot about Amsterdam, but have never been. Somehow, it looked different than I imagined. A lot prettier in real life. That is good to know. You really do have friends in nice places. No friends in exotic places for me, unless you count yourself and Melissa. HA!
It has been windy and breezy here all week, but no dust thankfully. We are supposed to be very cold again this weekend. I will cover my plants for the 4th time this winter. Unusual for South Texas. I hope you are not cleaning up lots of dust and sand this morning!!
