Happy at Home

That's what I was all weekend long.  Happy at home.  Inspired by Melanie's post about organizing her kitchen cabinets and drawers, I organized one of my cupboards.
Made a pot of lentil soup.  
To 8 cups of vege stock add 1 cup of red lentils, 1 onion roughly chopped, 1 carrot chopped, 2 small potatoes diced and boil until until lentils break up.  Reduce heat and simmer until desired consistency.  Add cumin powder, salt and black pepper to taste.  Squeeze in lemon juice and stir through.  Serve with fried pita bread.
And tried a new recipe (coconut biscuits) found at Tammi's blog Littlepoppa.  They were a hit here at home and at school today.
Speaking of Happy@Home, that just happens to be the name of Kim's blog.  She was baking yesterday too.

With five people going in and out of my pantry on a daily basis, I hate to say what state it is in. Suffice to say, it's in desperate need of some organisation. Lentil soup looks delicious and I must try those biscuits. I love all things coconut! :)

I've just recently been on a big clean out...I dug deep in cabinets and could not believe the dates on some things! out of sight and out of mind I guess

I like getting to take a peek into people's pantries. I like to see the different brands, although it seems like tea and coffee are universal!

The lentil soup looks so yummy - perfect on a cosy day! Alas I am down here in the southern hemisphere and its way too hot today for soup or cookies, so I must tuck those recipes away for a rainy day! Yum!

Glad you had a good weekend!

My weekends haven't been very good for the past month since Christmas, an affliction of the very dark moods that overcome me sometimes throughout life. Praying and trying to break free. Writing again on the new blog, did some baking with Sarah. The best part of the whole weekend was last night when Jim, Sarah and I spent an hour dancing on the Kinect Xbox (Dance Central game). It was fantastic fun and GREAT exercise. I'm not kidding.
