Brilliant blue skies were a welcome sight today after all the dreary, gray of last week. Somehow they just seem to make everything right in the world.
A blue plate filled with homemade oatmeal-chocolate chip-cranberry cookies doesn't hurt either.
1/2 cup of butter softened; 1/3 cup packed brown sugar; 1/4 cup granulated sugar; 3/4 tsp baking powder; 1/2 tsp baking soda; 1/2 tsp ground cinnamon; 1/4 tsp salt; 1/8 tsp ground allspice; 1 egg; 1 tsp vanilla; 3/4 cup all purpose flour; 1 cup quick cooking oats; 1/2 cup semi-sweet chocolate chips; 1/3 cup dried fruit. Preheat oven to 375. Beat butter with sugar. Add powders and spices. Blend in egg and vanilla. Beat in flour and oats. Stir in chocolate chips and dried fruit. Drop cookies onto baking sheet about 2 inches a part and bake 6-8 minutes or until golden. Transfer to plate and cool.
