Back to School Baking

Got bananas?

Make muffins!

I posted this recipe before but here it is again:

Mash 1-1/2 bananas and blend with one egg, 1/2 cup skim milk, 1/2 cup of honey and 1/4 cup canola oil. Stir in 1-1/2 cups wheat flour, 2 tsps baking powder and 1/4 tsp salt. Spray muffin tins and fill. Bake at 350 til done.

Great for a quick breakfast when trying to get used to the back to school routine. (I'm back to school but the kids don't start til mid-September.)

Going on week 2 1/2 here and thus far, we're moving along fine. Slightly better than past years, but different with the occurrence of high school and all of the activities that it brings.

I love banana bread and muffins!! I made some just the other day and they are all gone...have to wait for ripe bananas again!!

yes I always have bananas around here!

the kids will be back to school next week, so baking is on my list of things to do...that and blogging again! heheee...

I think I will try your recipe out...but I just might use unsweetened apple sauce instead of the honey! I wonder how that will be? but I figure it doesn't hurt to try something new, right!

Good timing for this recipe. I need something quick and accessible in the morning now that Im back at work too as Im not always hungry straight away. Lets just see when I'll have time to make them. Bananas dont last long here.
