A Favorite Thing: Neighborly Offerings

Our neighbor recently gifted us with fresh tomatoes, eggplant and carrots from his garden.
There really is nothing better than a fresh tomato.
The color is absolutely amazing as is the taste.
 With the eggplant I made parmigiana because it's the only way my kids will eat it.
It's really tasty served on whole wheat pasta or spaghetti.

How lucky you are to have fresh produce. The tomatoes from the stores around here don't taste like much. I love eggplant, too, but have never made it. Do you have a recipe you could share? Your parmigiana looks really good.

I quit trying to make eggplant at home - just never turns out good but yours turned out beautifully!

I can't wait to get going with my tomatoes. I usually share my produce if there is enough. I used to live next door to an elderly couple who had a huge garden full of vegetables and fruits. Each evening there used to a brown paper package containing some vegetables or berries to make a pie. Wonderful people! Take care. Chel x

How I love eggplant dishes! Fresh tomatoes too of course. I grow both, but this is the season of snow still, so it will be a long while. I have planted seeds though!

I would love a fresh tomato right now. The hot weather that helps them grow is still far off. We are tired of winter, but soon will be groaning about the heat.

Tammy, we have a long wait for fresh from the garden tomatoes, meanwhile I skip them unless I need a couple for a recipe, or some cherry ones to toss into a salad! Eggplants are almost always good though and I love them roasted especially. I had eggplant parmigiana last week at my favorite Italian restaurant - it was awesome!

Looks great and wow, so funny for me to think of getting things from the garden right now, when it's still freezing out here and nothing to be had like that for many months yet. We can't even plant outdoors here until at least the end of April/beginning of May. I'm not doing my vegetable garden anymore, just tired of tending it and so I'm planting more flowers this year instead - perennials that come back year after year.

Well, it's almost midnight and we're just in from being out with friends so to bed, to bed, said sleepyhead....

Your version looks very fresh and summery. I also make Parmigiana with zucchine (courgettes.) My mum used aubergines in Winter and zucchine in Summer. I love Parmigiana!

Ooh, fresh garden tomatoes. (Veggie envy!)

We love eggplant parmesan - another good way to use it is to stir-fry it with a nice garlicky brown sauce, Chinese style.
