Breakfast Cookie

Over the weekend I found a new blog
And a new cookie recipe.
2 mashed bananas, 1 cup of oatmeal, 1/4 chopped walnuts.  Mix, drop by spoonful onto cookie sheet and bake.
Simple, healthy and delicious.

I used chopped pecans instead of walnuts and added a dash of cinnamon.
The second time I made them, I even added raisins.
It's like having portable oatmeal.
My boss even described them as a baked smoothie.

Store them in the fridge and they are even better the next day.

I've just taken a whirlwind look at several of your last posts and just want to say, firstly, 'Happy Belated Birthday!' and my, you've been a busy bee! Your trip sounds lovely, your owls are the cutest and I couldn't agree with you more re: the richness of walks.

I, myself, have not been in blogging mode since I've returned from Canada, but hopefully, spring will help with that. I miss my daughter, who is in Canada trying to find work, as unemployment here is 27%!

I made a variation of these and they were pretty good. I personally liked heating them up just before eating. Yummy and thank you for sharing this recipe. Healthy eating is never too late...
