Meatless Monday, a Party and Pretty things

Greetings! I hope that you all had a relaxing weekend ...

and that you've had a great start to the week ahead. One of my favorite meatless meals is black beans with brown rice and condiments.


I season canned black beans with vege broth extract and garlic powder then serve them over brown rice with salsa, chopped fresh tomatoes, chopped avocado, diced onion and a dollop of sour cream. Yummo! If you need a last minute meal and your family will eat beans, it's a great meal that is filling and healthy.

Zack had his team party on Saturday. Balloons were involved ...

as was a lot of really loud popping. And certificates were received ...

While little league season is just starting in the States, we are ending our baseball season here. We have to take advantage of our winter temperatures. No one could survive the summer heat.

Over the weekend, I got this great magazine.

Although I am not presently decorating in this manner, I love, love, love just about every single image inside. In fact, I relate some of the photos to amazing blogging friends I've made over this past year. I've always been the type of person that when I shop, I think so and so would like this ... and so and so would like that ... and then I buy one for me and one for them. I will share that with you tomorrow. It's amazing how certain images remind you of wonderful people ... even if you've never met in person.

I found these lovely little notebooks with the sweetest images. Only about .40 cents each. I think I will use them to make friendship quotations book. I can use scraps of paper and quotations to make a nice little gift for special friends.


And this last image shows the sides of a box I bought to help try and organize my scrapbooking supplies. I loved all the crafting images on it. My dining table is a BIG mess! Will I ever get organized? That is a mystery! Have a great week dear friends!

Boy, you really know how to present your food! Even I would eat it and that's saying alot.
Looks like Zack had fun. What isn't fun about balloons and noise, unless you have a headache.
One of the most endearing things I love about you is how you always do think about others and what they would like and presenting it so pretty.
You've got some really great ideas boiling up in that crafty mind of yours. Hopefully you get organized to make it all easier for you.

I, too, love rice and beans! Black beans, pinto, or three-bean. I haven't eaten yet this morning and now I'm starving!!
Organizing is fun...you get to see things you forgot you had and it feels SO good to have your 'stuff' in some sort of order. Love those little tablets, too! You must have some great shopping opportunities there! I can imagine the colorful fibers and fabrics!
As always, I truly enjoy visiting you! When you're back state-side, let me know! CO isn't that far from AZ!

Good ideas for dinner..thanks..have a great week...we celebrated my Mom's 86th birthday on Sunday..she was so happy to have all her children and grand children all in one place..

Wow, everything looks just so nice. You always get new ideas, i love that about u. And each week when i see new magazines here i think of you and wish i could send them over. Well, next time i come, whenever that is.

I think we sometimes know our blogging friends way better than our "real" friends. I love the little books - so pretty. And your meatless meal looks really yummy. When I'm around balloons I have the "jitters" just wondering when one will pop. That party looks like a real case of the jitters for me but a fun time for you and your son. Diane

Your black beans look yummy. I remember when it was so hard to find them in Kuwait, and we had to get the dried ones from the States in order to have that dish. Hope you and the boys enjoyed your dinner.
Baseball party looks like fun for the kids. I don't know so much about the balloons and popping action to go with them. I think I would have headed outside...
Glad you had some time to sit down and look at magazines. I get the feeling you don't do that much anymore. Keep the magazine. Maybe someday you can mimick the ideas inside with your own little touch.
Have fun putting your quote books together. You are the queen of quotes. I know already they will be special!!

Hope you had a good Monday. I got caught up on SO much today after being gone at the golf center all weekend. I even cleaned for a few hours. It has been a while since I did that... HA!

I know you are a vegetarian and your family is not. So I assume that Meatless Monday is in reference to them. Am I correct? Funny enough, my family isn't getting meat too much these days. I tried, but they kept passing it up and eating other stuff! Hooray for me! Food looks great, now I need an avocado.

That meal looks delicious. I'm not a big meat eater, and my husband is a vegetarian, so I don't serve meat with every meal like some people do. My mouth is watering for an avocado right now.
Your blog has definitely changed any impression I might have had of Kuwait. I love visiting and seeing everything your family is doing. We tend to think that halfway around the world, everything is so different, but you're teaching us that it isn't. Did you realize how much you're teaching all of us?

Black beans and rice is OH so common around here!!:-) It is called "pico de gallo" in some parts (at least my friend from Nicaragua used to call it like that when he got it for lunch). Black beans are pretty much a meal group in Guatemala, just as rice, and plenty of vegetables...just like your picture!! So glad you like it so much. If you ever visit Guatemala, I know what to make for you, or where to take you ;-)
