A Good Friday

Fridays are always good in my book.  The first day of the weekend here when mornings are slow and easy.
Yesterday we woke to dust that turned to clouds and rain.  This morning we woke to clouds that turned to dust.  And it only got worse as the day progressed.  
We were going out for lunch, but after 45 minutes of driving the kids to where they wanted to go, we said to heck with that and came back home where I whipped up a 30 minute meal of Italian vegetable soup, rocket salad and mozzarella garlic bread.
I even threw a sheet pound cake in the oven.  1 cup flour, 1/2 tsp baking powder, 1/4 tsp salt, 5 TBS melted butter, 3/4 cup sugar, 1/2 tsp lemon zest, 1/2 tsp vanilla, 2 eggs and 1/3 cup milk.  Instead of the lemon zest, I used orange zest.  And substituted almond milk for regular milk.  For the frosting, I stirred some powdered sugar and orange juice into mascarpone cheese and then sprinkled chopped pecans on top.  Delicious!
Hubby says this kind of weather makes him feel depressed.  For me, it's a good excuse to cozy up on the couch and crochet the day away.

Tammy you are a lady after my own heart! I was going to "veg" out and crochet in a bit myself.
I have always adored the weekends because PBS shows a lot of British programming and I LOVE British comedies and dramas!

I love what you made for your meal! Everything looks delicious.

I would be like your husband with regards to the weather - cloudy, rainy, dreary weather makes me depressed. It's clouded over here this afternoon and I'm just feeling like going to sleep. That's what it does to me, instead of invigorating me.

But... that being written - we desperately need rain here. We haven't had ANY this spring and are already under a drought. So, it looks like we're going to get some later today, tonight and all day tomorrow for the start of our weekend. I'll either be napping, or maybe we'll venture out despite the rain, ha.

It must be hard on most people to live through such days with dust and darkness... And still, compared to half a century ago, how did people cope than?

Oh yay ... another recipe, I love trying your recipes, they're always so good. Adding that to my to do list. Thanks for sharing. Isn't it great that on such days our old friend "crochet" is always there. Makes such a differenc and brings forth treasures. Enjoy, blessings.

Tammy, your lunch seems to have saved the day! I love how you can just whip up an elegant meal like that. I am no cook and eat very simply. Thank goodness my dh goes along with whatever is put before him. I may try making your delicious sounding cake. All the dust you describe sounds like it makes it hard to breathe. I hope this is just a seasonal, temporary thing. Thanks for coming by my blog. I enjoy reading yours each week.

Boy, your weather is unpredictable these days. I would have been HAPPY to stay home too. I did not do much yesterday, and managed to catch up on little things around here. Your lunch looks great! Certainly better than what you could get in a restaurant!!

I love Fridays too even though I'm retired! LOL! They were so special for so long and they still are!
Your meal looked way better than any restaurant could have done. 30 minutes? That's amazing...Rachel Ray move over! I need to have that dinner in my repertoire as there are times when I just don't have the time to spend or I got busy and let the time get away from me. Teach your hubby to crochet and he TOO will love rainy, cozy days! LOL!
