Tea on Tuesday

I recently came a across a lemon bar recipe I had jotted down on a piece of paper and stuffed in a drawer. I love desserts with lemon so figured it was time to give it a try.

The crust is like shortbread and goes great with my ginger & mandarin organic tea.

Lemon bars
Combine 1 cup flour, 1 stick of butter and 1/4 cup of powdered sugar. Press into a 8 or 9 inch pan and bake at 350 for 15 minutes. Combine 2 beaten eggs, 1 cup of sugar (I used 1/2 a cup), juice of one lemon and 1 tsp of grated lemon rind. Mix well and pour over partially baked crust then return to oven for 25 minutes. Cool and sprinkle with powdered sugar to serve.

Please take a moment to say a prayer for all those affected by the tornado that ripped through Joplin, MO. More storms are predicted for that area today.

The cactus blooms are lovely, the lemon bars look delicious. I'm constantly reading updates about the Joplin tragedy and they remain in my thoughts. I can't get over the amount of devestating tornadoes we've had this year and the season isn't even close to being done. :( Every time, I think there but for the grace of God go I.

Oh I love Lemon anything! I really have to get into the kitchen and bake something...but I can't help myself from enjoying the nice stretch of weather we've been having here....and my bike is constantly calling out to me....R I D E M E ! LOL

That lemon bar looks lovely. I'm also a fan of lemons. Thanks for sharing the recipe, and thanks for mentioning Joplin. A town that size, and the amount of devastation that occurred, means I surely know some of the people who died. I'm still sifting through the safe-and-well site, as well as the Red Cross one. It's all still a bit surreal.

Being that Joplin is 4 hours south of me, we are on tornado alert ourselves. The size of the devastation there is beyond belief.

You're a great cook and as long as you can handle the sugar (and the butter + eggs) fine! Lemon is very healthy that's a fact.
Yeah, it seems that more and more natural disasters are happening but we must keep in mind that nowadays the entire world knows about it instantly. Statistically it always has happened but one didn't hear about it and of course the poplulation density makes quite a difference!

Oh my gosh, Tammy, I wondered if you heard about the tornado...and I just heard that they're going thru Oklahoma tonight...geez! It's so scary...There were 2 tornadoes and I was alone 2 months ago here in our Parish--I was scared to death...

Well, I hope it all clears up soon...and we're not even into hurricane season yet...hard to believe.

It's unreal that the school season is coming to an end, isn't it? Where does the time go?

My prayers are with those so horribly affected by our storms and severe weather. I don't ever remember such devasation to this extent in past years.
