Tea on Tuesday

I like trying different flavored green teas but recently came across this Asian Plum White Tea so brought it home to try. It goes well with the Raspberry Thumbprint cookies I made.

Raspberry Cream Cheese Butter Cookies

2 sticks of butter; 1/2 cup sugar substitute (I used Splenda); 2-1/2 cups wheat flour; 2 egg whites; 4 ounces light cream cheese; raspberry jam

Preheat oven to 350. Cream the butter and sugar together. Add flour, egg whites and cream cheese and mix well. Roll into balls about 5/8 inch diameter. Place on an ungreased cookie sheet. The cookies don't grow when baked so can be placed close together. Press thumb in center of ball to flatten and leave an indentation. Fill with jam. Bake for about 15-20 minutes.

Good morning, sweet Tammy! One of my very favorite cookies....yum! I taught my oldest daughter to bake these when she was a little girl, and it's still her favorite kind of cookie...they just melt in your mouth, don't they?!

Thanks for the recipe - I love thumbprint cookies. I want to use regular sugar though - do I just substitute it for the splenda? Also, I have regular flour.

Hope you're having a delightful day. It's sunny here with a clear blue sky - finally. Hope it stays, we've had way too much rain.

Hi Tammy...Would like to try that tea. Wonder if they carry it around here. I like to find good tasting green teas but usually I mix them with raspberry or peach tea.

The cookies look yum but I don't use any artificial sweeteners either. Regular sugar all the way, in smaller amounts.

Dearest Tammy,

That's the way I have to bake, using Splenda instead of sugar. Not always easy as it behaves different! But never mind, I'm not too fond of sweets. I take my tea with dried nuts and rice cakes most of the time...

Wow Tammy. I've actually made those "jam" thumbprint cookies before, although it's been awhile. Yours look marvelous. And white tea is some of my favorite, too. Even more subtle than green. Hope you are having a great Tea Tuesday.

Those cookies sound yummy! I too was at my first prom in 1984 and I too wore something from Gone like the Wind. Boy times do change!!! Try to find "appropriate" dresses for prom... it was a real challenge.

I too married my first prom date. We now will be celebrating our 25 wedding anniversary this year. Doesn't seem like that long ago.
