Happy Easter!

Weather wise, we've had dusty, cloudy conditions the past couple of days.  Even now as I listen to the wind blowing outside, I'm not sure if it wants to rain or if there's a dust storm going on.
Since it was an indoor kind of day, I did a little crochet.
And tried a healthy carrot cake recipe from the blog Chocolate Covered Katie.
Not sure what I did wrong as it looks nothing like the one she made, although the taste is fine.  I did miss the step where it says to let the wet ingredient sit for at least 10 minutes or overnight, so I think I will try again another time and see if I get different results.

Your carrot cake looks luscious, and I'm going to make a note of the recipe. What did you do to get that glazed top?
It's been a very quiet and peaceful Easter here. There was enough sun that I spent an hour knitting outside this afternoon, until my fingers got too cold to hold the needles. Then I came in and feasted on homemade soup. Now it's nearly time to go out for evening chores. A nice day :)

Happy Easter, Tammy! It's windy and blustery here in the PNW as well. We even had some hail, but the sun shines through.

We had a cool, grey Easter. I enjoyed it. I didn't get too much crocheting accomplished. Cooking occupied most of the afternoon. The family was happy with the results so that makes it worth it. Your healthy carrot cake looks yummy. Sometimes things taste better than they look. That happens frequently in my kitchen. Happy Easter, Lisa

We've been dealing with dust storms here lately too. It's my favorite time of year overall, I think, but the wind and dust are not pleasant. I hope you had a lovely Easter, Tammy. Take care and have a good week.

Hope your weather has cleared up by now.

I made a carrot cake for Easter too but mine was a Skinnytaste recipe with cream-cheese frosting. It was delicious and enjoyed by all, but now I'm back to my normal routine of no desserts (though I did great on vacation and didn't gain any weight despite eating things I normally don't and maintaining by doing my normal runs/walks).

Thankfully, we returned home to beautiful weather. A bit cooler than I would like, but lots of sunshine and actually temps are normal for here for this time of year (our normal is in the 60s at this time of year). I'm back to work today for the first day of the week (Tuesday) and not doing too bad, considering I had to get up at 5:30 a.m. I'm looking forward to getting back to my normal fruit diet today, with lots of water (which I couldn't do when we were traveling by car), and my normal neighborhood lunchtime run. Sometimes routine is good. ;)
