Tea on Tuesday

I was very happy last week to find that Earl Grey Green Tea was once again on the shelf at the grocery store. I prefer the taste of green tea over regular and don't feel the need to use any type of sweetener when I drink it.

To go along with my tea, I baked up a little something that was in the healthy section of my new muffin cookbook.

Lemon Polenta Muffins

Juice 4 lemons and finely grate the rinds Add 3 TBS of low fat natural yogurt to the juice and grated rinds so that it makes up 9 oz.

Mix together 6 oz of plain white flour, 1 TBS baking powder, 1/2 tsp baking soda, 10 oz polenta and 4 oz caster sugar

In a separate bowl, lightly beat two eggs with 6 TBS canola oil, stir in your lemon juice and yogurt mixture, then add to the dry ingredients and stir gently until just combined. Spoon into a greased muffin pan (or use cupcake liners) and bake in a preheated 400 degree oven for about 20 minutes until well risen, golden brown and firm to the touch.

I just finished up the last of the muffins yesterday. They were tasty and kept well at room temperature.

That little pinprick in the sky is the sun. Yep! The dust is back. Zack was supposed to have his last baseball practice this afternoon but we decided to skip it. The wind is really picking up out there right now.

I think I will join Jingles and turn in early tonight.

Oh, yuck!!! I hope the dust storm isn't as bad as your last one. Your muffins look and sound yummy, nothing like a new muffin book to inspire. That cat! She's so cute. I saw a book at SA today titled, It's This Way, Cat. It made me laugh. I know that it's THEIR way, always. Have a great day. Diane

My ancestry is English. You would think I'd drink tea from morning till night. But, alas, I'm a coffee girl. Guess the 'tea gene' wasn't passed down to me?!?!?

Your muffins sound very good!! I'm not much of a tea drinker as I prefer coffee myself....
We had 70+ temps yesterday but today back into the low 50's.

Jingles is just the sweetest looking cat. :) I love tea, but am not so fond of green tea. I just haven't gotten accustomed to the taste. I don't normally add sweetener with my tea either. Hope that dust moves out.

Your Earl grey green tea sounds really good ... I will have to loom for that! Green tea is my dad's favorite and Earl grey is my husband's .... A happy medium I would say! Your dusty sky is very eerie. It makes me think of what it's like in southern California when the wildfires are burning .... Hope you get some blue sky again soon!

i love green tea...actually i love most teas. those muffins look so yummy and they sound quite tasty too. i LOVE a lemon flavours!

OH NO on the dust storm...you haven't long cleaned up after the last one. :(
