A Much Needed Time Out

Taking time out from the hustle and bustle of life.

To have a late lunch with a friend. Chilled carrot soup with fresh cilantro and a dollop of sour cream; sandwiches of cream cheese and cucumber and jalapeno wrap filled with seasoned kidney beans.

Green tea, grapes and figs for dessert,

along with the moistest, most delicious date cake ever. The frosting was out of this world!

    Unfortunately, my Wednesday was spent, for the most part, fretting over the threat of severe weather yet again. We really need a good month or so with no rain or storms. I'd rather water than to have to be so stressed over the threat of severe weather which is all we seem to be having this spring.

    I'm hopeful that tomorrow will be a better, calmer day and am looking forward to the hot, clear, dry, holiday weekend that they are forecasting. :)

    P.S. For the past few days I've had extreme difficulty posting comments, only to your blog. I'm not sure why - but it takes me several tries in different ways for the comments to go through. ??

  14. Love the cucumber and cream cheese and all the other good stuff. Have never had chilled carrot soup. Being diabetic I am always looking for veggie recipes. So glad you had a nice break.
