Another new recipe tried. This one pulled from a magazine over the summer.
PASTA WITH GREEN BEANS AND TUNA
Boil 3 oz of fusilli pasta (or other short pasta)
Add 2 oz green beans 1 minute before pasta is finished
In a medium bowl combine 1 can of tuna, 1 TBS olive oil; 1 TBS chopped and toasted almonds; 2 tsps fresh parsley; 1 tsp fresh lemon juice; 1/2 tsp lemon zest; and 1 small clove garlic. Drain pasta and green beans and stir into mixture in bowl. Season with salt and pepper.
The recipe as written serves one. I cooked the amounts of wheat pasta and frozen green beans I thought I would need; left out the parsley; and used walnuts instead of almonds. A healthy salad along with homemade tomato soup for lunch. Yum! This one I will be making again.

Any new stores pop up in your shopping malls lately? I was telling my friend about all the wonderful places you have to shop there. Amazing. And we have 'nada'. Oh, I guess that's the trade we made for living in a small town of 2100 people!
When are the ball games over? Or have they just started? I so remember soccer games. But could never understand why they scheduled them for 5pm. Kids were pooped from school and hungry for dinner. Well, we all survived!
